This post is for all my pumpkin lovers! Not sure how to use pumpkin, or want more ideas on how to fit this nutrient packed gourd into your diet?  I’ve got you with a huge list of pumpkin recipes!!

I’m sharing some easy, yummy, nourishing ideas of how to incorporate one of my most fav fruits (yes, pumpkin is actually a fruit) this fall! I’m also including pumpkin recipes for inspiration, but feel free to get creative and put your own twist on them!

Oh my GOURD, I love PUMPKIN! Here’s why… 

Pumpkin is highly NUTRITIOUS!

Pumpkin is truly a superfood, jam-packed with nutrients and antioxidants! Even though this winter squash is technically included  in the fruit family, its nutritional content is more aligned with a veggie. Pumpkin is packed with fiber to help fill you up, balance your blood sugar and clean out your colon. It is also full of vitamins C, E, iron, zinc & folate, which helps boost our immune system. The vitamin A in pumpkin may lower your risk for certain cancers, and helps protect heart, kidney, & lung heath. Vitamin A also helps keep your eyes healthy. Vitamins C & E in pumpkin are great for skin health, and the beta carotene soothes inflammation & calms the skin. The high potassium in pumpkin may help improve blood pressure. Pumpkin’s tryptophan produces serotonin which is helpful for improving mood, digestion, & sleep.

Savory or Sweet

This mighty gourd is super VERSATILE!

It can be a great addition to both savory and sweet dishes. Although we tend to use it more in the fall, when the famous pumpkin spice latte makes its seasonal appearance back at Starbucks, don’t shy away from cooking and baking with it year round!

I personally like using canned pumpkin purée. It’s WAAAY easier and quicker than cutting up and cooking whole pumpkins. You can find organic pumpkin puree at most supermarkets. Be sure to buy non-BPA lined cans.

Pumpkin is DELICIOUS!

By itself pumpkin may not taste so exciting… unless you’re a six month old trying plain pumpkin puree for the first time. But in the right recipes, pumpkin can truly shine!
