Easy Pumpkin Inspired Recipes

In an effort to please my little people (kiddos) and warm my own mama heart, I’ve spent many hours in the kitchen cooking and baking simple yet delicious foods with them over the years. One of our absolute favorite flavors is anything pumpkin and with fall arriving it is a perfect time to try different pumpkin recipes!

Yes, we are Team Pumpkin Spice!  We are also the weirdos who clear the grocery shelves of limited edition pumpkin deliciousness because it only comes once per year.  Not any more!

I’ve shared my family pumpkin muffin recipe with our readers in my previous article “3 Pumpkin Nice Snacks”, which can all be made with Amoretti syrups. Today, I’m excited to share how we made a delightful pumpkin breakfast and a guilt-free dessert using Amoretti syrups.  They have a convenient three pack of pumpkin syrups that includes Pumpkin Spice, Pumpkin Pie and Crema di Pumpkin Pie. It was so easy, my friend.

Pumpkin Spice Pancakes

I started with my go-to gluten-free pancake mix made by Pamela’s brand, and followed the instructions right smack on the package to make a double batch of pancakes. I then added 3 pumps of the Pumpkin Spice Syrup and 2 pumps of Crema di Pumpkin Pie Syrup.

You guys, the flavor was on point!  By using the Amoretti Pumpkin Spice Syrup, I didn’t have to use any actual pumpkin puree in the batter.  This means the pancakes stayed nice and fluffy.  Sometimes using too much pumpkin puree can create a dense and gooey cake.  It’s not pretty and does not taste great (shakes head).  And nobody likes that, especially my kids.

Spare yourself the kitchen fail and give the Amoretti Pumpkin Spice Syrup a try the next time you make pancakes or waffles.

Next, I had my teen, whom I’ve called “Pumpkin” since she was a baby (her head was huge!) follow the Classic Pumpkin Spice Latte recipe on the Amoretti website. (By the way, they have tons of recipes and videos on their website.) 

Oh, my!  It was way better than a coffee shop latte.  If you’re a foodie like me, then you’ll be able to taste the difference.  Amoretti is committed to making quality products.  It’s no wonder that the Oxnard based business supplies their wide range of premium products to restaurants, hotels, bars, bakeries and directly to consumers like you and me.

We also tried the dairy-free version, which was also quite nice.  On mine I added a little whipped cream and sprinkle of ground cinnamon on top; it made for a picture perfect mug.  I even whispered to my mug, “I love you a latte.”  Dad’s aren’t the only ones with cheesy puns.

Lastly, I tried a social media trend by making an “ice cream” using 1 cup of low fat cottage cheese, 2 pumps of Amoretti Pumpkin Pie Syrup and 1 small packet of stevia in the raw.  All I did was puree the 3 ingredients in the blender, transfer the mixture into a freezer safe dish and let it sit for 2 hours in the refrigerator.  I loved the guilt-free, low fat, low carb and high protein option.  I dare you to give it a try.
